In this post, I will discuss how to bake a healthy banana bread while potty training my toddler and entertaining my 4 month old, aka, "the boy who wouldn't nap".
I know, putting the word "poop" right next to the word "banana bread" might not be the most appetite inducing thing to do. But let's be real, when being a mother of a small child, the word "poop" doesn't phase you much anymore. I, for my part, have grown accustomed to the sound of it. And to the smell for that matter. I have been potty training my 3 year old for a few weeks now and we are in the glorious "not wearing a diaper anymore, but still not pooping in the potty" phase. Yep, that basically says it all, right? No need to mention that these days, I feel like my life consists of wiping poopy butts and doing endless amounts of laundry.

Now, what has to come out, has to go in. (Note to self: Work on smoother segues.) To keep the healthy digestion process of my kids going, I have to feed them. Obviously. With healthy food preferably. But easier said than done when you have a 4 month old who refuses to nap during the day. So in addition to to our daily life evolving around my daughter's potty training (because that sh@t usually happens spontaneously. Pun intended.), I have been trying to figure out a nap schedule that will allow my sweet son to rest peacefully for more than 10 minutes at a time.
All this doesn't leave me with much time for cooking basic meals for my family, let alone baking fancy stuff. You know, like banana bread. But this mama needed some sugar for her nerves and the bananas in the fruit bowl needed to be eaten. So I really had no choice. Fortunately, I DID have all the ingredients needed to make this sweet treat.
After constantly running back and forth between the kitchen and the baby, countless potty breaks, 2 sets of poopy underwear and lots and lots of hands washing in between, I managed to gather the ingredients, measure (eyeball) them, and throw them together in a bowl. I earned mommy bonus points for letting my daughter help and teaching her about wet and dry ingredients.

I earned mommy bonus points for letting my daughter help and teaching her about wet and dry ingredients.
We had a lot of fun, until I discovered that I could not find my bread baking pan. But hey, I am a mom, I am used to being faced with challenges. Even big ones like missing baking pans. So out I pull my 8" round springform. Boom! Problem solved and being a total hero in the eyes of my 3 year old daughter for saving the day. And that was almost better than our fancy, round banana bread itself. Almost.
Round banana bread - Recipe:
- 3 ripe bananas mashed
- 1/2 cup plain, Greek yogurt
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1 1/2 cup whole wheat flower
- 1/3 cup old fashion rolled oats
- 1 teaspoon baking powder
- Pinch of salt
- 1 tablespoon Chia seeds
- 1/2 cup of sliced almonds
Heat the oven to 350 degrees. Mix all wet ingredients together. In a second bowl, mix the dry ingredients. Add the dry ingredient mixture to the wet ingredient mixture, mix well and set batter aside. Prep a 8" springform with butter and flower so the bread won't stick to it. Fill the batter into the form, sprinkle some more sliced almonds on top and put in the oven for about 30 minutes or until a toothpick comes out clean.
