Tuna - Tomato Lettuce Boats
With summer approaching fast here in Florida, I love recipes that do not require me to turn on my stove to add to the heat. My family prefers fresh and light dishes that do not leave you sweating after a meal, but give you energy to take that evening walk. This super fast dinner is also a great side dish option for BBQs or other types of get-togethers.
Ingredients (for 2):
Spread the lettuce leaves on a tray or big plate. Mix tuna with olive oil, red onion, salt, pepper and the cherry tomatoes. Spoon mixture into the romaine lettuce leaves. And that is all it takes.
One reason, why I love this recipe is that it is so versatile. Add green onions instead of the red onion, mix in fresh herbs or your homemade mayo. Be creative!

- Full head of romaine lettuce, washed, leaves separated
- Can of Tuna in water
- Half red onion, finely diced
- Cherry tomatoes, cut in half
- Olive oil
- Salt/pepper to taste
