I've been looking forward to this post for a while! Making homemade butter is such an easy and a fun project to do with your older kids. You can create various flavors by adding herbs, spices or other ingredients. It is a lovely gift to give for the holidays, and I guarantee you, serving your own homemade butter with your Thanksgiving meal, will be a huge hit!
So let's get to it:
You will need:
STEP 1 - Beating:
Put 2 cups of organic heavy cream in a big glass or metal bowl. (The bigger, the better as it can get messy). Beat the cream with a hand beater first on low, then on high speed. The consistency will first be liquid, then look like whipped cream and soon after, you will see the curd separating from the buttermilk. It should look similar to this:
So let's get to it:
You will need:
- 2 cups of organic, preferably, pasture fed heavy cream.
- Hand beater
- Big glass or metal bowl
- Ice water
- Spatula
- Fresh herbs, spices, or other ingredients to flavor the butter
- Mason jar with lid
STEP 1 - Beating:
Put 2 cups of organic heavy cream in a big glass or metal bowl. (The bigger, the better as it can get messy). Beat the cream with a hand beater first on low, then on high speed. The consistency will first be liquid, then look like whipped cream and soon after, you will see the curd separating from the buttermilk. It should look similar to this:
Beat for a few more minutes and then drain the buttermilk. (Save it for drinking or baking, it's delicious!)
STEP 2 - Washing:
Add some Ice water to the bowl. Take a spatula and slowly scrape all butter flakes from the bowl and press them against the side of the bowl. The ice water will become cloudy. Drain, add more ice water and repeat this process until the water is clear. This process is called washing the butter and removes the rest of the buttermilk from the curd. This is important, as any buttermilk will cause the butter to go rancid. Keep repeating this process until the ice water comes out clear.
Add some Ice water to the bowl. Take a spatula and slowly scrape all butter flakes from the bowl and press them against the side of the bowl. The ice water will become cloudy. Drain, add more ice water and repeat this process until the water is clear. This process is called washing the butter and removes the rest of the buttermilk from the curd. This is important, as any buttermilk will cause the butter to go rancid. Keep repeating this process until the ice water comes out clear.
STEP 3 - Adding flavor:
You now have made butter! Let's add some flavor by adding fresh herbs, spices, or other ingredients. For example, one of my favorite things to add are garlic, rosemary, tarragon and Himalayan salt. Simply, put 3 gloves of garlic, fresh, washed rosemary and tarragon in a food processor and blend until smooth. Add the mixture to the butter and mix it with the hand beater. Add salt to taste.
Another option is to add cinnamon and maple syrup. Tastes like heaven on warm buns or bread!
Put butter in mason jar containers (I use these) and keep in the fridge for up to 4 weeks.
