It's lunch time at our house and much to Amelie's delight I made Avocado pasta. Besides the pasta, which obviously needs to be cooked, this dish is completely raw and packed with nutrients.
Ingredients for the sauce are:
2 ripe, organic avocados, 3 table spoons of extra virgin, organic olive oil, one handful of fresh basil, juice of half an organic lemon, 2 gloves of garlic. Salt/pepper to taste.
Put all the ingredients in a food processor and mix until completely smooth. Serve over hot pasta and top with cut up organic cherry tomatoes and freshly grated Parmesan.
